We cultivate ancient Koroneiki trees using traditional, organic farming methods. No pesticides or chemical fertilizers ever touch our soil, ensuring the purest expression of the Cretan terroir.

Timing is everything. We hand-pick our olives in early November, just as they begin to turn from green to purple. This early harvest yields less oil, but maximizes the polyphenol content and vibrant peppery flavor.

Within four hours of leaving the branch, our olives are cold-pressed at temperatures strictly below 24°C. We bottle our oil unfiltered to preserve every drop of flavor, aroma, and nutritional value.
