Growing
Cultivated in the mineral-rich soil of Crete, benefiting from 300+ days of sunshine and Mediterranean sea breezes.
Harvesting
Hand-picked in early November while olives are still green to maximize polyphenol content and preserve delicate aromas.
Pressing
Cold-extracted within 4 hours of harvest at temperatures strictly below 27°C to prevent oxidation.
Testing
