Ultra-Low Acidity

The lower the acidity, the fresher and purer the oil. EU standards allow up to 0.8% for extra virgin. We're at 0.2% — four times better than the minimum standard.

Early Harvest

November

We pick our Koroneiki olives in early November while they're still green. This yields less oil per olive but significantly higher quality — more flavor, more polyphenols.

Cold-Pressed in Hours

From tree to press in under four hours. Cold extraction means the oil never exceeds 27°C, preserving the volatile aroma compounds that heat destroys.

Many brands blend oils from multiple farms, regions, or countries. Every drop of Asterius comes from one family grove in Crete — no blending, ever.

We skip the filtration step that most producers use for shelf stability. Unfiltered oil retains micro-particles of olive that carry extra flavor and nutrients.

The Process

From Tree to Bottle

Growing

Cultivated in the mineral-rich soil of Crete, benefiting from 300+ days of sunshine and Mediterranean sea breezes.

Harvesting

Hand-picked in early November while olives are still green to maximize polyphenol content and preserve delicate aromas.

Pressing

Cold-extracted within 4 hours of harvest at temperatures strictly below 27°C to prevent oxidation.

Testing

Rigorous laboratory analysis to verify acidity levels below 0.2% and polyphenol counts exceeding 450 mg/kg.

Bottling

Sealed in UV-protective dark glass flushed with nitrogen to prevent oxygen exposure and maintain freshness.

Shipping

Stored in climate-controlled facilities and shipped directly to ensure the oil reaches you in perfect condition.
